The pistachio mastic grows easily around the Mediterranean and is also known as the mastic tree because its sap was commonly used in ancient times as chewing gum.  In Iran, this resin has traditionally been used as an ingredient in pastries, confectionery, liqueurs, cosmetics and incense.
