Originating from Central Asia and Persia, jasmine has been cultivated since the 17th century. It is harvested in August and the flowers have to be picked just before they bloom fully at dawn, then distilled as quickly as possible. Syrupy, warm, floral, animal, heady, intoxicating, exhilarating: the adjectives used to describe jasmine absolute abound. Its fragrance is a favorite with high-end perfumers.
